Cooking on the Stovetop
- Place the cocotte on a burner that matches its base diameter.
- Use low to medium heat settings. Cast iron retains heat exceptionally well, so high heat is rarely necessary and can damage the enamel over time.
- Add a small amount of oil or fat before adding food to prevent sticking.
